Trick or Treat with Pumpkin Ghoulies

It’s pay day!  But stop, don’t splurge your well earned cash on goji berries.  Well in my opinion anyway.

These little dried up bitter berries are apparently loaded with amino acids, vitamin C, calcium, zinc, selenium and many other important trace minerals, plus are high in fiber.  I’m not doubting that they are, but for me, there are plenty of other foods that offer similar levels of goodness, which taste 1000000000000 times better and are much more ‘user-friendly’, and of course pocket friendly. Tesco offer a 200g bag for £3.20, which is what I bought about a million years ago, and have been struggling to find ways to eat them up.  I’ve tried smoothies, topping porridge or overnight oats with them, but the easiest way I’ve found is in baking – mainly because the other ingredients mask their taste, or they plump up during cooking and are less chewy.

Goji

So, here is a quick and easy, healthy Halloween treat for children and adults alike.

Get into the ‘spirit’ and whizz up these raw Pumpkin Ghoulies,

You will need:

  • 300g raisins
  • 100g goji berries
  • 100g desiccated coconut
  • 50g pumpkin seeds
  • 30g cashew nuts
  • 2 tsp of cinnamon
  • (If needed) 1tbsp melted coconut oil

Method:

  1. Add all ingredients into a food processor and whizz up until blended together.  If the mix is a little dry, add the melted coconut oil.
  2. Roll into balls, and place into the freezer for 20 minutes then store in the fridge for up to 2 weeks in a sealed container.

That’s is – so simple and so tasty.

  1. Is it a typo in the list of ingredients for your pumpkin ghoulies?? It lists pumpkin seeds twice! Really want to try these but would prefer to wait for clarification. Many thanks tracy

  2. Is it 130g of pumpkin seeds total or 50/80g?? In your pumpkin ghoulies as the recipe calls for them twice or is it a typo. TIA
